    Disney’s been sharing all kinds of magic since quarantine began. They’ve given us a cookbook worth of food from the parks, like Dole whip, churrosandMickey beignets.

    Now, Disney’s making our lives even better by sharing another beloved recipe: totchos. We’re ready for a bowl of chili cheese goodness!

    What Are Totchos?

    We’re so glad that Disney thought of this. “Totchos” are exactly what they sound like: nachos, but with tater tots as the base instead of tortilla chips. Potatoes improve pretty much every meal, so we’re delighted they’re here. And leave it to Disney to improve upon the culinary magic of nachos.

    This unique dish comes from Woody’s Lunch Box at Disney World (if the name sounds familiar, it’s probably because Woody’s Lunch Box has also given us delicious three-cheese grilled cheese sandwiches). Yes, this is the very same recipe that the chefs at Disney use. No knockoffs here!

    How to Make Disney’s Totchos

    This super easy recipe is courtesy of the Disney Parks Blog. They recommend making a batch to binge-watch the Toy Story movies, and we have to agree; there’s no better way to enjoy this delightfully offbeat treat.

    Ingredients

    This recipe makes six heaping bowls of totchos.

    CHILI

    • 1 pound lean ground beef
    • 1 medium yellow onion, finely chopped
    • 3 cloves garlic, minced
    • 1 (14.5 ounce) can crushed tomatoes
    • 1 (15 ounce) can tomato sauce
    • 1 (15 ounce) can kidney beans, drained
    • 2 tablespoons chili powder
    • 1 tablespoon ground cumin
    • 1 tablespoon coarse salt
    • Black pepper, to taste
    • Ground cayenne, to taste

    QUESO SAUCE

    • 2 cups cheese sauce
    • 1 (10 ounce) can diced tomatoes with chilies

    TOTCHOS

    • 1 (2 pound) bag frozen potato barrels
    • 1-1/2 cups corn chips
    • 3/4 cup shredded cheddar cheese
    • 6 tablespoons sour cream
    • 2 tablespoons green onions,thinly sliced

    Instructions

    Step 1: Cook the chili

    Brown the ground beef in a 5-6 quart Dutch oven over medium heat until cooked, then drain excess grease. Add onions and garlic, then saute for 5-7 minutes or until the onion is translucent. The next step is to add crushed tomatoes, tomato sauce, kidney beans, chili powder and cumin. (This is a step kids can help with!)

    Finally, simmer for 20 minutes, then add salt and pepper to taste. You can set aside the chili while you make the queso.

    Step 2: Make the queso sauce

    In a small saucepan, heat cheese sauce and diced tomatoes over low heat for 10 minutes. Now it’s time to assemble a mountain of totchos.

    Step 3: Assemble the totchos

    Follow package instructions to back the tater tots. Once they’re fully cooked, divide them evenly among six bowls; then top bowls with 1/4 cup each of corn chips, chili and queso sauce.

    Finish the totchos with 2 tablespoons shredded cheese, 1 tablespoon of sour cream and a teaspoon of green onions.
