No Yeast Flatbread

As this is a yeast free flatbread recipe, the main 2 ingredients are plain flour and water. However, I find adding salt and oil makes a tasty difference.

Even though there is no yeast added to this flatbread, the dough still needs to rest for 15 minutes as this makes it easier to roll out.

If you’re new to making bread, then this is a great recipe to start off with! it’s the perfect simple recipe even for an unexperienced baker.

The hardest part of this recipe is kneading the dough (which is quite simple).

Below are the 4 ingredients needed to make this flour and water flatbread with no yeast:

  • Plain Flour: As this recipe uses plain flour and not self-raising flour, it has no raising agents in it which makes this an unleavened bread recipe.
  • Water: Use warm water
  • Olive Oil: I used extra virgin olive oil but this is optional.
  • Salt: Added for flavour and to enhance the taste, this is optional.

Sprinkle a small amount of flour onto your work surface and knead the dough for 2 to 3 minutes.

If the dough is sticking to your work surface, sprinkle a small amount of extra flour onto the work surface.

TIP: Knead the dough until it comes together; over-kneading will make the flatbread tough.

Step Four:

Divide the dough equally into 8 and roll into balls using the palms of your hands. If you’re measuring, each section of dough should be around 36g each.

Sprinkle a little bit of flour onto your work surface and roll out a ball of dough until flat and thin.

Heat a dry frying pan on a medium to high heat.

Add the rolled dough and cook for 1 to 2 minutes on both sides. The flatbread will puff up whilst cooking, you’ll want to see charring on each side of the flatbread.

Repeat until all flatbreads are cooked.

My Top Tips For Flour And Water Flatbread

Use a non-stick frying pan or non-stick skillet, this prevents the flatbreads from sticking to the frying pan and tearing apart.

The dough will have a slight stickiness to it. If the dough is hard to knead because it’s too sticky, add a small tablespoon of flour.

I roll out the flatbread dough one at a time. When one flatbread is nearly finished cooking, I start rolling out the next flatbread. I find this method prevents the flatbread dough sticking to my work surface.

Adjust the heat as necessary. If your flatbreads are browning too quickly and are not fully cooked, turn the heat down. If the flatbreads are not browning or puffing up at all, then increase the heat.

Stick to the recipe as much as possible, adding too much water or too much flour can alter the texture of the flatbread.

If extra flour is burning in the pan after frying a couple flatbreads, use kitchen towel to wipe it clean.

How To Store

These homemade flatbreads are best eaten freshly made but they can keep for 2 to 3 days. Keep in an airtight container at room temperature.

To freeze, wrap the flatbreads in foil or place in a freezer-safe container. Simply defrost when you are ready to eat!

With 100% whole wheat breads, I like the weight of water to be about 70% of the weight of flour, the instant yeast at 1.3% and the salt at 2%. For 4 cups of whole flour (at 130g/cup), I'd use: 350ml water. 2 1/4 teaspoon of instant yeast.

What does flour and hot water make? ›

The act of adding boiling water to flour is actually a very common technique used in Scandinavian and Asian baking to pre-cook the starch in the flour so it takes on a jelly-like texture (via Virtuous Bread). The result is a softer, squishier bread without the addition of any extra fat.

What is the ratio of flour to water when making bread? ›

The Ratio: 5:3, Flour to Water

The ratio for bread is 5:3, flour to water, plus yeast plus salt and sometimes plus sugar. The ratio made my head spin for a while because I'm not math inclined, but, when working with the 1 teaspoon of yeast per pound, or 16 ounces, of flour, it was a lot easier.

Is it better to use milk or water in bread dough? ›

Using milk instead of water in your yeasted bread is an easy way to add a touch of sweetness, making it ideal for challah, dinner rolls, cinnamon rolls, and hot dog buns. Milk sugars not only add a hint of sweetness but also result in a softer, more uniform crumb and ensure a nicely browned crust.

What happens if you add too little water to bread dough? ›

Dough with not enough water will not only feel dry to the touch, but will also be difficult to stretch. If that's the case, you'll want to add water before the dough has the chance to proof and damage the gluten. Add the water little by little until the dough is wet, but not sticky.
