We’ve all had those times when a sudden craving for cake arises. If you don’t have the time to make a whole cake, that’s when I love to make a healthy mug cake. It satisfies your sweet tooth in the most delicious and fastest way.

What’s a mug cake???

A mug cake is a single serving cake baked in the microwave. All the ingredients are mixed together, placed inside of a mug, and then it cooks in the microwave for about 1 minute.There are really endless varieties and flavours – but today we’re making an easy microwave vanilla mug cake.

It takes no more than 2 minutes to make such a mug cake. Yes, only 2 minutes is needed to create, an airy, delicious and moist cake!

Healthy Mug Cake Recipe Vanilla flavour Ingredients:

To make this healthy mug cake you will need the following simple ingredients:

  1. buckwheat flour – can sub for all purpose flour, oat flour or whole wheat flour
  2. coconut sugar – any granulated sugar will work, can sub for maple syrup but will need to use more flour.
  3. almond milk – other non-dairy milk such as coconut milk or soy milk will work as well as cows milk
  4. pure vanilla extract – can use vanilla bean paste
  5. sprinkles
  6. baking powder
  7. coconut oil – can use unsalted butter, olive oil or other oils wont work in this recipe.

How to make easy vanilla mug cake recipe

  1. In a small bowl whisk together the dry ingredients – flour, sugar, and baking powder.

  2. Add in the wet ingredients almond milk, coconut oil, and vanilla and mix until just combined. Stir in the sprinkles

  3. Transfer the cake batter to microwave-safe mug or ramekin
  4. Microwave for roughly 45 seconds – 1 minute, or until firm to the touch. Microwave timemay vary depending on your microwave so keep a close eye on your mug cake.

Your easy dessert tastes best served fresh and warm. It tastes great on it’s own, however you can also serve with a scoop of vanilla ice cream or whipped cream top of the cake.

Healthy Mug Cake Recipe Vanilla flavour Substitutions:

You can sub the buckwheat flour for any gluten free flour blend. You may have to add more or less liquid depending on the flour you choose.

The coconut sugar can be subbed for any granulated sugar. Brown sugar or organic cane sugar would work well.

The almond milk can be subbed for any plant-based milk or cows milk.

The sprinkles can be subbed for anything you fancy really. You could add vegan chocolate chips, blueberries, or raisins.

HEALTHY VANILLA MUG CAKE NO EGG

This is what I like to call a life-changing recipe. Truly the best mug cake! It is so so easy to make and most of the ingredients are simple pantry ingredients. This microwave mug cake contains no egg, is vegan, gluten free and dairy free.

Why is my mug cake chewy?

This vegan mug cake should not come out chewy. The texture should be light and fluffy and a little bit denser than a typical vanilla cupcake.

If you are getting a chewy mug cake then it’s due to overcooking. Each microwave will give you different results due to difference in wattages. Most microwaves range from a wattage of 600 to 1200 which means the mug cake may need a bit longer or a bit less time.

Each microwave will be different due to the different wattages. They range from 600 to 1200 which means your microwave could take a little longer or cook quicker. I cooke mine for 45 secs and give it 15 more seconds if required.

Another tip for getting a perfectly light and fluffy mug cake it to just mix the dough until everything comes together. Over mixing can lead to a hard and chewy mixture.

Can you reheat a mug cake?

If you are not tempted to eat the mug cake straight away, then yes you can reheat it. Cover with a plastic wrap or aluminium foil and store in the fridge for up to one day. Do not leave at room temperature.

To reheat remove the covering and place in the microwave for around 10 seconds.

Can you eat mug cakes cold?

I would highly recommend eating them when they are fresh and warm. If you prefer it cold then that is absolutely fine!

What kind of mug do I need for a mug cake?

Any microwave safe mug or small container will work. I used mini ramekins to make mine.
